PRESSURE IS A GOOD THING



The key to LakeStore Marina's delicious fried catfish lays is the fryer. It's a Henny Penny pressurized steam fryer, the same one that Brookshires uses to fry their chicken. The Hennys cost a pretty penny but the end result is worth it. The advantages of pressure frying are clear: controlled low pressure allows faster cooking at lower temperatures. This not only saves energy, but helps seal in the food’s moisture and natural juices for a healthier, better-tasting product.
